Canberra’s food safety inspection regime is being undermined by poor record keeping and staff shortages as it tries to enforce hygiene standards in restaurants, according to an auditor-general’s report.

And the audit found evidence that many Canberra restaurants could have been allowed to renew their food-handling licences for years without any official review or approval.
